Softer Biscotti

A reader has asked: I love the flavor of biscotti, but I’d like to make a softer version. Any suggestions?

A: Any recipe for biscotti that has butter or oil in it is your best bet. When you initially bake the logs of dough, only bake until set, but not until the dough becomes hard, and they should be quite tender after cooling. Don’t give them a second baking after slicing.
