Bircher Muesli, Storchen Zurich

This is the recipe from my friends at the Hotel Storchen in Zurich.  The recipe here is a small fraction of what they prepare every day at the Storchen for the elaborate and delicious breakfast buffet. Makes about 4 servings


1 cup uncooked rolled oats (regular oatmeal)

1/2 cup ground hazelnuts

1 cup plain yogurt, any fat content

1/2 cup milk

1/3 cup sugar, or less, to taste

2 large Granny Smith apples, rinsed and grated but not peeled

Juice of half a small lemon, strained

1/3 cup heavy whipping cream, lightly whipped

2 pints mixed berries such as hulled and rinsed small strawberries (or slice large ones), blueberries, blackberries, and raspberries

  1. The night before, combine the oats, hazelnuts, yogurt, and milk and stir together well. Cover and refrigerate.
  2. Next morning stir in the sugar, grated apples, and fold in the whipped cream and berries.
  3. Don’t be too gentle with the berries – if they bruise a little as you fold them in they’ll release some of their juices to color the Muesli.
