Finding Fresh Coconut

A reader has asked: I recently made a coconut custard pie with fresh coconut and it tasted bland and strange. Did I do something wrong?

A: Probably not. Fresh coconuts are often anything but, and an old nut will not produce very good flavor, especially in something as delicate as a custard. I often substitute sweetened shredded coconut for fresh coconut with excellent results.
