Buttermilk Substitute

A reader has asked: I usually skip recipes that call for buttermilk because I hate to buy a whole quart to get just 1 cup. Is there any solution to this?

A: Yes, certainly. There is an excellent powdered buttermilk (just add water) made by Saco [http://www.sacofoods.com/products/view/cultured-buttermilk]. Or, if all else fails, substitute 1 cup of milk into which you have stirred 1 tablespoon of distilled white vinegar.
