White Cake Vs. Yellow Cake
A reader has asked: Aren’t white and yellow cake the same recipe, but one has whole eggs and the other just egg whites?
A: Yes and no. If your yellow cake recipe also has milk in it, then you can substitute the same volume of egg whites for the whole eggs in the recipe, not 1 egg white for 1 egg, but 3 egg whites for every 2 eggs. If your yellow cake recipe doesn’t have liquid besides the eggs, then look for a specific white cake recipe rather than trying to transform the one you have.
