A reader has asked: My local bakery makes a strawberry shortcake with sponge cake layers. Is that the right way to do it?

A: A traditional strawberry shortcake is a sweet, rich baking powder biscuit, buttered and filled with the strawberries and cream while still warm—perfect for the family table, but not easy to make for retail sale. So many bakeries make a light cake and fill it with whipped cream and strawberries and call it strawberry shortcake. When these cakes are well made they’re very good, but strawberry shortcakes they’re not.
